Chicken Quinoa Salad

I’m going to be honest. This whole eating healthier thing doesn’t come naturally to me. Coming from someone who lived her entire life eating food from a box, bag or a drive-through just figuring out WHAT to buy has been a huge learning curve for me let alone knowing what to do with it all when I get home.

This started out as a recipe a friend shared with me a few summers ago and over time we’ve tweaked it over and over until we finally found what appears to be our perfect combination. It would be easy to add lots more veggies or omit the chicken for an easy dinner or side dish for a potluck. The recipe is so simple and so versatile there really isn’t a wrong way to make it and I encourage you to find what works for you and your family. Instructions
  1. Cook quinoa in water according to package instructions, approximately 45 mins. While quinoa is cooking, dice bell pepper and onion and add to large bowl. Thaw corn and add to bowl. Rinse black beans and add to bowl. Add cooked chicken. Once quinoa is tender, transfer to colander/strainer and run cool water over until quinoa is cool. Drain completely and add to bowl. In a small bowl mix vinegar, oil, sugar, garlic, salt and black pepper until well combined. Pour dressing over salad and toss. May be served immediately or store in refrigerator for 1 hour prior to serving for stronger flavor.
