I’m going to be honest. This whole eating healthier thing doesn’t come naturally to me. Coming from someone who lived her entire life eating food from a box, bag or a drive-through just figuring out WHAT to buy has been a huge learning curve for me let alone knowing what to do with it all when I get home.
This started out as a recipe a friend shared with me a few summers ago and over time we’ve tweaked it over and over until we finally found what appears to be our perfect combination. It would be easy to add lots more veggies or omit the chicken for an easy dinner or side dish for a potluck. The recipe is so simple and so versatile there really isn’t a wrong way to make it and I encourage you to find what works for you and your family. Enjoy!
